“All Things Green” Smoothie

by Amanda Oakes-Cornellissen
If you find it hard to include enough greens in your daily diet, especially during colder months, this green smoothie is perfect for busy, active lifestyles. It is a nutrient-rich and tasty option that your kids will enjoy too! You can prepare all the ingredients ahead of time and store them in the freezer for quick use whenever needed.
Ingredients:
X3 Medjool dates (the mild sweetness from the dates makes a green smoothie more palatable for those new to green smoothies)
1.5 cups of water
2T chia seeds
2T ground flax seeds
1t Green Power Powder (available from Dischem)
1 large handful of baby spinach
½ cucumber chopped
2 green apples with the skin, cubed
¼ stick celery (according to taste)
1 piece of fresh ginger (according to taste)
1 small piece of fresh turmeric (according to taste) – add a pinch of black pepper for better turmeric absorption
½ avocado pear
10 – 15 mint leaves (according to taste)
2T lemon juice
½ t salt
Method:
Soak the dates and seeds in water overnight or 30 minutes prior to making the smoothie. Add all the other ingredients and blend. The smoothie can be stored in glass jars with a lid and left to reach room temperature on cold days, otherwise it can be stored in the fridge for up to 24 hours. ENJOY!
Recipe makes 3-4 Servings.
