Black bean and sweet potato skillet

This one-skillet wonder is full of nutritional value and is fun to eat! Sweet potatoes bring vitamins A and C, as well as a fibre kick, and black beans ramp up that fibre dose, provide micronutrients like calcium, potassium, and magnesium, and add plant-based protein to your meal! Dipping corn chips or whole-wheat pita into the tomato-filled goodness adds some fun to eating healthy food.

 

Ingredients:

  • 1 large, sweet potato, cubed
  • 1 tsp salt
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 tsp chilli powder
  • 2 tsp garlic powder
  • ¾ tsp cumin
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • Tortilla chips or taco shells to serve
  • Optional additions:
    • Dairy-free cheddar to sprinkle on top
    • Cilantro for serving
    • Avocado or guacamole

Instructions

  1. Boil the sweet potato until tender (4 -5 minutes)
  2. Sauté the onion and pepper, add in spices and stir together
  3. Add beans, tomatoes, sweet potato, and ½ a cup of water. Simmer for 3 minutes
  4. Mix in some of the chips and cheese if using
  5. Top with remaining cheese, place in oven on broil for 2 minutes
  6. Top with cilantro and serve with guacamole dip and some added corn chips
