Chickpea smash sandwich

Ingredients

  • 1 can cooked chickpeas, drained and rinsed
  • 1 heaped teaspoon wholegrain mustard
  • 1 teaspoon capers + 2 teaspoons caper brine
  • Juice of ¼ lemon
  • 2 spring onions or 1 small red onion, finely diced
  • 2 teaspoons vegan mayo (if avoiding mayo, can sub in tahini or ½ avocado)
  • 1 large pickled cucumber, finely chopped
  • Bread of choice
  • Salt and pepper to taste

 

Mash the chickpeas in a bowl, using a fork, until well mashed with some chunky bits for texture. Add in the rest of the ingredients and mix together until well combined.

Put a good heaping of the mixture onto your bread (fresh or toasted) and enjoy as a high protein, delicious lunch.
