Chickpea smash sandwich

Ingredients
- 1 can cooked chickpeas, drained and rinsed
- 1 heaped teaspoon wholegrain mustard
- 1 teaspoon capers + 2 teaspoons caper brine
- Juice of ¼ lemon
- 2 spring onions or 1 small red onion, finely diced
- 2 teaspoons vegan mayo (if avoiding mayo, can sub in tahini or ½ avocado)
- 1 large pickled cucumber, finely chopped
- Bread of choice
- Salt and pepper to taste
Mash the chickpeas in a bowl, using a fork, until well mashed with some chunky bits for texture. Add in the rest of the ingredients and mix together until well combined.
Put a good heaping of the mixture onto your bread (fresh or toasted) and enjoy as a high protein, delicious lunch.
