Recipe for 4-6 with leftovers!

Ingredients:

 

1 T olive oil
1 chopped onion
2 garlic cloves, minced
1 red pepper diced
small chopped chili
1t cumin, coriander, cayenne pepper, smoked paprika powder, pinch of cinnamon (smoked paprika is the game changer)*

1/2 sachet tomato paste
2 tins chopped tomatoes
2 tins of beans (kidney, sugar, black – your choice)
2t cocoa powder
1t honey
salt and pepper to taste
*woolies has an affordable ‘mild seasoning’ spice mix or their ‘chili con carne spice mix’ – half the tub/box

Method:

Saute onion, garlic and red pepper in olive oil until soft
Add spice mix and fry until fragrant
Add tomato paste and fry for 1 minute
Add the rest of the ingredients plus roughly 100mL of water
Simmer for 30mins

Serve with coriander, spring onion, guacamole, jalapenos
