Ingredients

  • 100g silken tofu
  • 50g cherry tomatoes (optional)
  • Handful baby spinach (optional)
  • 1 tsp tumeric powder
  • 1/2 tsp fresh garlic (or garlic powder)
  • 1 tbsp Braggs Liquid Aminos (low sodium replacement for soy sauce)
  • 2 tbsp soy milk
  • Salt and pepper to taste

Method:

  1. Start by heating a non-stick pan. You can use a small amount of olive oil if you don’t have a nonstick pan.
  2. Add your silken tofu by crumbling it with your hands, or breaking it up in the pan with a spatula. You may use firm tofu as well, but the texture of silken tofu more closely mimics scrambled eggs.
  3. Fry for 5 minutes.
  4. Add the garlic, turmeric, Liquid Aminos (or soy sauce), and soy milk, and mix together.
  5. Optional: Chop your cherry tomatoes and spinach and add to the pan, frying for a further 5 minutes, or until the tomatoes are tender.
  6. Serve alone, or on whole wheat toast or Ezekial bread, with salt and pepper to taste.
