
Did you know that eating legumes most days will help you live longer? Dietary surveys in blue zones found that 95% of 100-year-olds ate plenty of legumes, including various beans, lentils and peas as part of their predominantly plant-based diet.
Not only are they packed with protein, fibre, essential vitamins, minerals and antioxidants but they are also budget-friendly, convenient and long-lasting.
I love using white beans as the perfect blank canvas for creating a variety of interesting flavour combinations. In this recipe I have paired them with peas to create a quick and simple dip. Fresh mint and zesty lime add a light, fresh flavour while the peas and beans provide a creamy, satisfying texture. This dip also doubles beautifully as a canapé spread on crostini.
Ingredients:
250g frozen peas
250g white beans
2 tbsp mint leaves, chopped
1 tbsp extra virgin olive oil
Splash of plant-based milk of choice
Juice of ½ lime
Sea salt and black pepper to taste
Method:
- Put the peas in a bowl and cover with boiling water. Set aside for 5 minutes and then drain.
- Place the peas in a blender or food processor with the rest of the ingredients and blitz on high speed for 1-2 minutes until you have a smooth purée.
