Makes 1 Litre
Most commercial creamy dressings are “SAD” staples—loaded with inflammatory oils and preservatives. This “HAD” version uses raw sunflower seeds and avocado to create a nutrient-dense fat source that supports heart health.
Ingredients:
  • 100g raw sunflower seeds (soaked overnight and drained)
  • 30g fresh parsley
  • 30g fresh basil
  • 30g fresh mint
  • 1 large avocado (creates a dairy-free creaminess)
  • 2 garlic cloves, crushed
  • 80ml apple cider vinegar (supports glycemic control)
  • 80ml water
  • Juice of 1 lemon
  • 120ml olive oil
  • 20ml honey
  • ½ teaspoon pepper
  • 1 teaspoon salt
Method:
  1. Blend: Place all ingredients into a high-speed blender or food processor. Blend until the mixture is completely smooth and vibrant green.
  2. Season: Taste and adjust salt and pepper if needed.
  3. Store: Decant into a glass jar.
