Most commercial creamy dressings are “SAD” staples—loaded with inflammatory oils and preservatives. This “HAD” version uses raw sunflower seeds and avocado to create a nutrient-dense fat source that supports heart health.
Ingredients:
-
100g raw sunflower seeds (soaked overnight and drained)
-
30g fresh parsley
-
30g fresh basil
-
30g fresh mint
-
1 large avocado (creates a dairy-free creaminess)
-
2 garlic cloves, crushed
-
80ml apple cider vinegar (supports glycemic control)
-
80ml water
-
Juice of 1 lemon
-
120ml olive oil
-
20ml honey
-
½ teaspoon pepper
-
1 teaspoon salt
Method:
- Blend: Place all ingredients into a high-speed blender or food processor. Blend until the mixture is completely smooth and vibrant green.
- Season: Taste and adjust salt and pepper if needed.
- Store: Decant into a glass jar.
Physician’s Note: Use this as a salad dressing, a dip, or a sauce for grilled fish. It bridges the gap between indulgent flavour and functional nutrition.
