These easy to make Mexican boats are as tasty as nachos but unprocessed and filled with fiber, phytonutrients and protein

Ingredients:

  • 5 large baby marrows
  • 50g baby tomatoes
  • 1.5 cups of black beans(canned or raw which have been soaked and boiled)
  • 2 Mielies/sweet corn( boiled or cooked in the microwave)
  • Jar of salsa of your choice
  • Two limes or one lemon

Optional:

  • 1 ripe avocado
  • 15g of fresh coriander
  • Fresh chili

Method:

  1. Halve the baby marrows
  2. Scoop out the middle
  3. Boil in hot water for about 3 minutes
  4. Remove from the water and put in an oven proof dish

For the filling:

  1. Mix two handfuls of chopped up baby tomatoes, black beans( 1.5 cups) , the corn off the cob of two mielies, chopped coriander (about a handful) and three heaped tablespoons of salsa (you can make your own or buy some)
  2. Spoon the filling into the zucchini boats and bake in the oven on 180-200 degrees Celsius for 10-15 minutes
  3. Once it’s cooked through squeeze over the juice of two limes and serve with guacamole.
