These easy to make Mexican boats are as tasty as nachos but unprocessed and filled with fiber, phytonutrients and protein
Ingredients:
- 5 large baby marrows
- 50g baby tomatoes
- 1.5 cups of black beans(canned or raw which have been soaked and boiled)
- 2 Mielies/sweet corn( boiled or cooked in the microwave)
- Jar of salsa of your choice
- Two limes or one lemon
Optional:
- 1 ripe avocado
- 15g of fresh coriander
- Fresh chili
Method:
- Halve the baby marrows
- Scoop out the middle
- Boil in hot water for about 3 minutes
- Remove from the water and put in an oven proof dish
For the filling:
- Mix two handfuls of chopped up baby tomatoes, black beans( 1.5 cups) , the corn off the cob of two mielies, chopped coriander (about a handful) and three heaped tablespoons of salsa (you can make your own or buy some)
- Spoon the filling into the zucchini boats and bake in the oven on 180-200 degrees Celsius for 10-15 minutes
- Once it’s cooked through squeeze over the juice of two limes and serve with guacamole.
