Look no further for your new go-to lunch meal! This tofu salad sandwich requires a bit of prep, but all your hard work will be rewarded by the explosion of fresh and savoury flavours as soon as you bite into it.

Ingredients

  • lettuce, leaves
  • red onion, sliced
  • cucumber, sliced
  • tomato, sliced

Tofu Salad

  • 1.5 blocks super-firm or tofu, shredded, seasoned and baked until golden (click here for recipe)
  • 2 celery ribs, finely diced
  • 1/3 cup red onion, finely diced
  • 1/2 medium green bell pepper, diced
  • 1/2 jalapeño pepper, seeds and membranes removed, finely minced
  • 2 green onions, green parts only, thinly sliced
  • 2 tbsps fresh parsley, roughly chopped
  • 1 tbsp fresh dill, roughly chopped

Dressing

  • 1/2 – 2/3 cup vegan mayonnaise (adjust to taste)
  • 1 tbsp apple cider vinegar OR 1 tbsp fresh lemon juice
  • 2 tsps Dijon mustard
  • 2 tsps garlic powder
  • 2 tsps onion powder
  • salt and black pepper (or to taste)

Sourdough, ciabatta, or other bread of choice (click here for recipe).

Method

  1. Lightly toast two slices of sourdough or other bread.
  2. Spread both slices with a generous layer of pesto.
  3. To one slice of bread, begin layering the tofu salad, red onion, cucumber, and tomato.
  4. Grind some salt and black pepper on top to taste.
  5. Add the lettuce and the other slice of bread.
  6. Wrap the entire sandwich in parchment paper and slice it in half. Enjoy!
